Why tallow needs a specialist
Most contract manufacturers are built around water-based emulsions. Tallow products are anhydrous, fat-based systems where raw-material variation, heat history and cooling behavior decide texture, odor and shelf life. A manufacturer who treats tallow as "just another butter" tends to discover its quirks on your production run.
Five things to evaluate
- Sourcing transparency; can they describe where the tallow comes from and how the source is qualified?
- Processing controls; how are heat, oxidation and handling managed, batch after batch?
- Documentation depth; specifications, batch records and certificates of analysis, or just invoices?
- Development capability; structured sampling and honest feasibility answers, not "everything is possible".
- Communication; a named contact, defined response times and a process for handling problems.
Documentation is the tell

Red flags worth respecting
Vague sourcing answers. No written specification for the tallow itself. Prices quoted confidently before the brief is understood. Promises of any claim you like on the label. Each one predicts a specific, expensive problem later.
